Diet Coke Barbecue Chicken

Good Tuesday morning!

I've added a wildlife section to The Gallery today. Day two of our camping trip was almost zoo-worthy!

RANDOMNESS #1 - A Little Camping Anecdote - We like to catch up on movies when we go camping. We take Mikie's laptop and a few DVDs, and when we've eaten our share of s'mores, we crawl into the tent, get comfortable and watch.

Our first pick was Knight and Day starring Cameron Diaz and Tom Cruise. Everyone had seen it but me, and they all thought it was a great movie except for one word. (I didn't hear the word because everyone coughed and sneezed during that part of the movie to spare me.)

To be honest, I haven't watched a Tom Cruise movie since he jumped on Oprah's couch and called Matt Lauer "glib." Those two things bothered me... a lot. I thought my "Tom Cruise" days were over.

But I liked this movie. He was funny, charming and he reminded me of the Tom Cruise from way back when. The "Top Gun Tom Cruise" of my youth... or mid- to late-20s.

NOTE - This is NOT a kiddie/parent movie. It's a teenager/parent movie. I didn't want anyone to watch it with their five year-old this weekend because I recommended it.

RANDOMNESS #2 - The Pioneer Woman's new book (Black Heels to Tractor Wheels - A Love Story) is now available at bookstores near you. I'm asking for it as a Mother's Day gift, but I may not be able to wait that long.

RANDOMNESS #3 - This may throw A Simple Life into a PG-rating today, but I thought it was kind of funny. I stopped by the restroom before walking. (I know what you're thinking. Already too much information.) When I locked the door behind me, I read the little silver plate bolted to door holding the lock in place.

Do you know what restroom stall doors are called? Do you?

Hiny Hiders. I'll let that sink in a second.

I googled it. They don't spell it with an "e." If you learn nothing else today, remember that little fact. It might be a Jeopardy question one day!

Diet Coke Barbecue Chicken

My sister, Bev, shared this recipe with me Sunday. She and her family tried it AND liked it very much. It's on my list of things to try this week.

You will need the following:

4 skinless/boneless chicken breasts
1 12-ounce can of Diet Coke
1 cup ketchup

1. In a large non-stick skillet, bring chicken, Diet Coke and ketchup to a boil.

2. Cover and reduce heat.

3. Cook 45 minutes.

4. Uncover. Cook until sauce has the consistency of regular barbecue sauce. (It will just take a few more minutes, so don't walk away from the stove.)

That's it! Bev says it tastes better than regular barbecue chicken... and it has that easy-breezy thing working for it, too.
