Strawberry Pound Cake

Good Tuesday morning!

ANNOUNCEMENT - Beginning today and going through next Wednesday, the Comment Section is open for business. You never know.

RANDOMNESS #1 - Roxie's basketball team came SO close to winning last night it was painful. We lost by only one point. A foul was called just as Roxie made a basket which would have given us a one point lead... so it didn't count.

But wait! There's more! With only two seconds left in the game, another young lady caught a pass, dribbled twice, aimed and shot... and missed by only a fraction of an inch. Major, major disappointment.

But the team played great as a whole. And as for the young lady who almost got it in before the buzzer... she left a GREAT Facebook message on her page a few minutes later. She declared the game "AWESOME" and said, "I loved every second of it!" It was a great game, but not as great as this young girl's attitude.

We have some really good games ahead of us, I think!

RANDOMNESS #2 - Josh is still enjoying his new lumberjack job. He's getting to drive things... mini-tractors (bigger than a lawnmower, but smaller than the big tractor) and golf carts. He's outside (which he loves). He's coming home tired and dirty... but happy. (Of course, today is only day three of the new job, but so far, so good.)

RANDOMNESS #3 - Today I will be baking the Double-Chocolate Cheesecake featured in last Tuesday's post. I will be taking it to Body Pump for all of my body-conscious friends to try this afternoon. I'll post the play-by-play pictorial in the morning!

Strawberry Pound Cake

If you've known me two minutes, you know I love to make pound cakes AND any other kind of cake whose main ingredient is the ever-popular cake mix. That being said, I give you the following:

You will need:

1 box white cake mix (YEA!)
1 6 ounce box strawberry Jello
4 eggs
2/3 cup oil
10 ounces frozen strawberries (thawed)

1. Mix all ingredients together until moist.

2. Pour into greased Bundt pan.

3. Bake at 350 degrees for 1 hour.

The strawberries make this cake extra moist. You can sprinkle powdered sugar on top and add halved or whole strawberries for garnish. (Or you can place strawberries around the bottom of the cake.)

And the best part... It looks like a Christmas dessert because of the color and the strawberries. Perfect.

This recipe was borrowed from a recipe card that came in one of my Alabama Power Company bills one day. I love a company that gives back, don't you?
