Bacon/Egg/Toast Muffin Breakfast

Good Tuesday morning!

The Gallery Pics are a little hodge-podge today. I will explain below!

RANDOMNESS #1 - I received the new Southern Living magazine in the mail yesterday. It is a feast for the eyes! Beautiful. ONE of my favorite articles is "6 Instant Pumpkin Displays." Basically, these are easy and doable ways to stack a group of pumpkins making all of your friends and neighbors think you are a professional Southern Living pumpkin stacker.

Three of the pictures above show the beginnings of a centerpiece I am working on for my dining room table. My first goal is to show the finished product tomorrow morning.

My second goal is to NOT make you laugh aloud when you click on A Simple Life tomorrow.

RANDOMNESS #2 - You'll notice a picture in the Gallery of the top of a home we saw on Smith Lake Saturday. It was a big, pretty blue house right on the lake. As you can see, a large, soft yellow Smiley Face sits atop this pretty blue house. I LOVE that!

I can just imagine this house is named "Happy Place" or "Our Happy Home." You know, something catchy like that.

Fun fact for you... I have always wanted a name for our house. You probably guessed this about me because I've cleverly named my vehicle The Big Gold Van. I've also named my family the Faulkner Five. It's been difficult. The past eight years I have wracked my brain trying to come up with the perfect moniker for our old, squeaky, rambling house which we call HOME!

The good names have all been take... Falcon Crest, The Ponderosa, The Kennedy Compound. But I will continue this eight-year quest to find the right name. I will! It's not like I'm doing anything else productive! (See attempted centerpiece above!)

One more fun fact for you... Our boat is secretly named The Enchanting Belinda. I haven't told the rest of the family yet because I'm pretty sure I'll receive some negative feedback.

Bacon/Egg/Toast Muffin Breakfast

As promised, this is the Martha Stewart breakfast recipe which was featured on The Today Show last week. The pictures are below the post if you need any proof they look edible!

You will need the following:

Bread slices
Melted butter
Cooked bacon
Eggs
Muffin tin

1. Preheat oven to 350 degrees.

2. Spray the muffin tin with vegetable oil.

3. Use a rolling pin to flatten each piece of bread.

4. Use a large, round cookie cutter to remove crust from flattened bread.

5. Cut flattened bread in half and press it into muffin tin. Brush melted butter over top of bread.

6. Add two pieces of bacon (criss-cross) on top of bread.

7. Crack an egg on top of bacon.

8. Bake for 20 to 25 minutes. (But check at 15 minutes. You may like your eggs to be softer.)

9. Salt and pepper to taste.

NOTE - I used fully cooked bacon (from the box). It made the recipe much quicker because you microwave the bacon slices you need for 45 seconds (crispy). You don't have to make a big "bacon mess" in order to prepare this delicious little recipe.

ANOTHER NOTE - Although the egg yolk looks "runny," it has the consistency of a hard-boiled egg.

That's it, Folks! You will need to eat it as soon as it comes out of the oven. The bread is a little soggy if you wait and reheat it. These little breakfast muffins are very good, and this is a recipe the kids will enjoy preparing, too.
